RedHat's kickstart/anaconda is such a sweet setup. You totally automate an install with little or no real effort. RedHat even has an excellent guide on how to configure it.

If you just have CD-Roms you'll still have to swap out the CD-Roms to get all the files but that's no big deal. If you have access to an FTP server with the files on it you can do a totally automated install. Simply dump the floppy in and walk away. It will download everything and configure the box for you. Totally kickass!
